Agar-agar is a gelling agent obtained from the cell walls of some species of red algae.

It is an excellent tasteless gelling agent. Even a concentration of 1%, dissolved in hot water, is sufficient to achieve a good gel.

Agar reaches its liquid state at 95 ° C so that the gel is stable at higher temperatures than other gels and solidifies at 45 ° C, allowing no access to perform cold preparations.
